A well-lit Lodge
Established in 2005 by two urban families dedicated to land preservation and creating an environment where the only lights glowing brighter than the fireflies are the stars in the summer sky.

Our beautiful wildflower berms look a little unruly.
Since the lodge driveway and road up the hill needed a new gravel surface, Jeff and Dan decided to order three truck loads full, enough to replenish the well-traveled areas, landscape the berms and be available for the covered bridge.
Look how gorgeous the berms look in the after photos.

But all this improvement did not come without some backbreaking shoveling.

July 28, 2014 And there was Light
Covo lodge has been lit by candles and lanterns for its first ten years. This year, the partners made a unanimous decision to add a solar generator with a backup battery pod and two solar panels. Our first entry into the 21st Century is an old pole lamp that does a pretty good job lighting up the room.
Today, Jeff installed a ceiling fan with lights and cleverly hid the wiring in the beam. Watch the video below to catch the excitement!
June 28, 2014 Growing it up and Tearing it down
The threatening noon time clouds took a turn away from the farm, until late at night when lighting lit up the sky and rain pounded hard on our tin roof, dispelling the need for hand watering in the morning.
Garlic is nearing the end of its growth cycle and will be ready to harvest in a few weeks. Pumpkin plants are off to a great start in the original lower field by the ponds and a new spot behind the lodge.
Reclaiming the Milking Barn
Taking down the old barn is turning into a real adventure with some unexpected surprises. I flipped a board to take the nails out and disturbed a sleeping bat. I got a good look at him before running off screaming to a nonchalant Jeff, who couldn't imagine what the ruckus was about. The historic wood is being reclaimed for the covered bridge over the creek.

Mowing and Baling the Hay
Covo Hills was a real working farm today as Jared and his dad mowed and baled the upper hay field. Curious about the process, Jeff and I jumped on the ATV and followed the tractors.

June 22, 2014 Scapes Revisited
Garlic scapes aren't as fleeting as we thought. One week after the original harvest, Jeff found an abundance of curly stalks that hadn't appeared the first time around. This time we sauteed the scapes with thyme, sea salt and freshly ground pepper, then simmered until tender with a diced potato in vegetable broth. I pureed the batch, then added an almond milk roux (in place of half and half).
Delicious and milder than the pesto!
